The Chinese usually have the fmily name first, however in this case Sing sounds more like a chinese family name than Hop, in fact I don't know of any chinese with the name Hop. Furthermore I didn't know he was the Bonanza cook, so I'll leave it to your discretion as to whether or not you take a general.
